Carrot Kosambri with sprouted green-gram


Kosambri is a South Indian name for a salad and happens to be one of the easiest dishes in Indian cuisine. The word Kosambri comes mostly from the word Kosu which means vegetable in kannada. So a dish using raw vegetable is a Kosambri. This is how I have interpreted the word. Does anyone know any other explaination?  Leave me a comment and let me know. There are different ways of making Kosambri using various grams and lentils. Any festival or function in Karnataka is incomplete without one type of this on the platter.

I make this pretty often at my home. It can be a nutritious snack which can be eaten as it is or can be eaten along with Chapatis too. Here i have added sprouted green gram to make it all the more healthy.

Ingredients:

3-4 carrots, peeled, washed and grated
a handful of sprouted green gram
1 green chilly chopped finely
1 inch piece of ginger grated
salt to taste
1/2 lemon
Coriander leaves for garnishing (optional)

Seasoning:

1 tsp oil
1/4 tsp mustard seeds
a few curry leaves

Recipe:

Mix grated carrots, green gram, green chilly, ginger, salt. Squeeze out the lemon juice and mix it in.

For seasoning, heat oil, add the mustard seeds. When mustard begins to splutter, add the curry leaves. Pour this over the prepared salad.

Garnish with coriander leaves and serve fresh.

Serves: 2

Dear K, I find Kosambari and raita a good way to add more veggies to our diet.
Carrot and green gram make a healthy and colourful combo. Perfect to eat just like that.
